Mint Iced Tea

I’ve always thought that too much of a good thing makes for a particularly bad morning. Not that that stops me from partaking in over-consumption of very good things. My Friday night last week consisted of many, many glasses of wine, and ended at 6 in the morning with fresh squeezed orange juice … and gin.

So it’s understandable, I think, that I’ve decided to take it a little easier this week. Ever battling an oral fixation, though, I needed something fun to sip on as I worked. With the weather being so sunny on Sunday, I could think of nothing more appropriate for a beautiful Spring day than a jug of fresh iced tea.

Making iced tea is easy – you brew a large batch, then cool it down. But I added some favorite ingredients – mint, ginger and sparkling water – to mine because, well, I can’t get enough of a good thing.

 

Mint Iced Tea

Bring 6 cups of water to a boil and pour over 6-8 mint tea bags. Let brew for 10 minutes, then remove bags. Stir and cool down.

Meanwhile, make a strong simple syrup: Bring 2 cups sugar and 1 cup of water to a boil, along with half a bunch of mint and a knob of peeled, sliced ginger. Let cool, then strain through a sieve to catch the mint and ginger.

Add the syrup to the cooled iced tea to taste (you’ll have some leftover, unless you have a serious sweet tooth). Serve in a glass with ice cubes and a splash of seltzer for some sparkle.
