Cinnamon Sugar Muffins

1 egg
1/2 cup half-and-half
1/4 cup extra virgin olive oil
1 3/4 cup flour
1/2 cup granulated sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 cup light brown sugar
2 tbsp. ground cinnamon
2 tbsp. melted butter

Preheat oven to 400 degrees. Grease 6 over-sized muffin tins and set aside.
